Abstract

The objective of this research is to know the effect of various protease enzymes addition to the coconut oil yielded and quality. The volume of coconut ull yldu was measured, then the water content, 1odme number, saponitication number, peroxide number and acid number was analyzed as quality parameters. The other objective of this research is to know the usefulness of its process and product as an alternative learning resources of chemistry at class XII of senior high school. Coconut oil production conduct through mixing of coconut milk cream with various protease enzymes (papain and bromelain) and 15 hours incubation. Papaya extract used as papain and pineapple extract as bromelain. Coconut oil was separated by centrifugation, then the volume was measured and the quality was analyzed. The result of coconut oil yield and quality is compared. The result of this research shown that coconut oil which was produced through mixing of coconut milk cream with papain has higher yield than coconut oil which is produced with addition of papain. The variation of protease enzymes has an influence to the coconut oil quality especially on water content, saponification number and peroxide number. The process and product of this research expected to be able to used as learning resources of chemistry at class XII of senior high school especially on chapter : lipid.
