This research was conducted in three phases: characterization of photodiode, creating and testing a detection system of cooking oil that has been used for frying pork based on LED and photodiode. The result showed that the photodiode has transfer function V = 0,3358e0,026I; input and output relationship with correlation coefficient r = 0,98; sensitivity 0,026 volt/lux; and reapetability 99,58\%. The success rate of detection system implementation on test samples was 100\%.} }
