Tomatoes is one of the beneficial commodities for life, but tomatoes is easy to rot. This current study aims to find out the best treatment in the addition of variations in the concentration of sambiloto leaf extract as an antimicrobial on cassava starch edible coating applied to tomatoes by dipping and spraying methods. This research was expected to produce the best biopreservative products in the process of preserving tomatoes so that the quality is maintained. The research method is a mix-method combination of the quantitative and the descriptive qualitative method of research. The observed results of the study are colour changes, shrinkage of weight and the number of microbes. The obtained data were analyzed using a statistical test of Two Way Annova with a value of p < 0.05. The results of the analysis show that there is no noticeable difference in the application of the edible coating using dipping and spraying methods with the addition of sambiloto leaf extract to the resistance of tomatoes. However, the best application is the application of edible coating spraying method with leaf extract sambiloto 4% that it is with a longer discolouration than the control, the shrinking weight 12,72%, and the number of microbes 6500 CFU/mL. %K Antimicrobial, Biopreservatives, Edible coating, Sambiloto, Tomato %D 2021 %I UIN SUNAN KALIJAGA YOGYAKARTA %L digilib46999
