Still, its analysis in complex matrices often results in overlapping spectral signals, while the selection of solvents such as ethanol plays an important role in influencing the quality and profile of the resulting spectra. This study aims to analyze the characteristics of the FTIR spectra of quercetin, analyze the effect of dissolution on spectra acquisition using a chemometric approach, and apply a method to analyze quercetin in shallot extract as a matrix. The study was conducted by recording the FTIR spectra of standard quercetin and shallot extract using ethanol solvent and applying Multivariate Curve Resolution (MCR) for spectral criteria. The results showed that the FTIR spectra profile of quercetin was consistent with the main functional groups of flavonoid compounds, the solvent affected the shape and intensity of the spectra, and the MCR method was able to separate the quercetin spectrum in a mixed solution. Based on the identification results, the FTIR spectrum of quercetin shows typical absorption bands at 3270 cm⁻¹ (-OH group), 1664 cm⁻¹ (C=O group), and 1606 cm⁻¹ (burned C=C) which correspond to the chemical structure of quercetin. Variations in ethanol solubility concentration interfere with the quercetin signal, but data processing with MCR successfully recovered the quercetin spectra accurately (R² = 0.964; correlation 0.98). The FTIR-MCR method on shallot ethanol extract successfully identified and separated the spectra of the mixture components into single components, and the relative levels of shallot extract from MCR results showed potential for quantification."^^ .
