This research aimed to determine the ethanol levels produced during fermentation and evaluate their compliance with halal standards as outlined in the Indonesian Ulema Council (MUI) Fatwa No. 10 of 2018. The methodology involved separating volatile components from fermented siwalan sap samples with concentrations of 30%, 70%, and 100% using a simple distillation technique, followed by ethanol quantification through gas chromatography (GC). The results showed that ethanol levels increased with higher sap concentrations and prolonged storage time, peaking on day 8 and decreasing by day 12. Ethanol retention times for 100% siwalan sap stored for 8 and 12 days were recorded at 2.763 and 2.767 minutes, with corresponding ethanol concentrations of 45.959% and 20.550%. Based on the analysis, only samples stored for 0 days at 30% and 70% sap concentrations complied with the halal standards stated in MUI Fatwa No. 10 of 2018.
