The method used to obtain ethanol in this research is fermentation. The fermented product was then subjected to simple distillation to separate ethanol from other compounds, and the resulting distillate was analyzed for ethanol content using GC-FID. The analysis results showed that on day 0, the ethanol content for concentrations of 30%, 70%, and 100% was 0%, 0%, and 0%, respectively. On day 4, the ethanol content increased to 8.305%, 20.596%, and 31.207%, while on day 8 it reached 9.601%, 26.418%, and 35.032%. On day 12, the ethanol content decreased to 7.754%, 17.056%, and 29.157%. According to the Indonesian Ulema Council (MUI) Fatwa No. 10 of 2018, ethanol content below 0.5% is still categorized as halal. Therefore, only the ethanol content on day 0 across all concentration variations meets the halal criteria as specified by MUI Fatwa No. 10 of 2018. This study provides an important contribution to understanding the halal limits of fermented palm sap products based on the ethanol content formed.
