However, its application is limited by degradation, low solubility, and high volatility. Encapsulation is one strategy to preserve biological activity and protect active compound. This study aimed to determine the characteristics of clove leaf oil encapsulation using gelatin and maltodextrin through complex coacervation method and to analyze its antibacterial activity against Streptococcus mutans. The encapsulation process was carried out by mixing clove leaf oil with gelatin-maltodextrin coating solution to form an emulsion, followed by induction of coacervation through pH and temperature adjustment. The resulting encapsules were freeze dried and analyzed for product yield, oil content, and encapsulation efficiency. The optimal formulation was obtained at 1:1 gelatin-maltodextrin ratio, with product yield 54,18%, oil content 63,21%, and encapsulation efficiency 62,36%. This formulation was further evaluated for stability testing using GC-FID over six days and antibacterial activity testing against Streptococcus mutans using the disc diffusion method. Stability testing showed that eugenol content in the encapsulated oil remined 90,99% after six days of storage, higher than pure oil at 88,72%. This result indicating that gelatin-maltodextrin wall material effective protected the active compound from degradation. Antibacterial testing revealed that the encapsulated clove leaf oil produced a broad inhibition zone.
