Merr.) merupakan hasil samping&#13;
agroindustri yang belum dimanfaatkan secara optimal. Bonggol nanas memiliki&#13;
kandungan lignoselulosa dan gula yang berpotensi sebagai bahan baku pemanis&#13;
rendah kalori. Penelitian ini bertujuan untuk mengidentifikasi dan membandingkan&#13;
senyawa hasil fermentasi bonggol nanas menggunakan Saccharomyces cerevisiae&#13;
dan Lactobacillus plantarum sebagai kandidat pemanis rendah kalori. Bonggol&#13;
nanas terlebih dahulu dihidrolisis secara enzimatik menggunakan enzim selulase&#13;
kemudian difermentasi secara terpisah oleh masing-masing mikroba. Hasil&#13;
fermentasi dimurnikan dan dianalisis menggunakan Liquid Chromatography–High&#13;
Resolution Mass Spectrometry (LC-HRMS). Hasil analisis menunjukkan bahwa&#13;
fermentasi oleh Saccharomyces cerevisiae menghasilkan senyawa trehalosa&#13;
sebagai metabolit utama. Sementara itu, fermentasi oleh Lactobacillus plantarum&#13;
menghasilkan senyawa aspartyl-phenylalanine serta trehalosa dalam jumlah&#13;
terbatas. Trehalosa memiliki tingkat kemanisan lebih rendah dibandingkan sukrosa&#13;
namun memberikan respons glikemik yang lebih ringan, sedangkan aspartylphenylalanine&#13;
merupakan senyawa dipeptida dengan intensitas kemanisan tinggi&#13;
dan kandungan kalori rendah. Berdasarkan hasil tersebut, limbah bonggol nanas&#13;
berpotensi dikembangkan sebagai sumber bahan baku pemanis rendah kalori&#13;
melalui pendekatan bioproses berbasis hidrolisis enzimatik dan fermentasi&#13;
mikroba.&#13;
