Its existence creates sour and astringent to the taste of some fruits. Nevertheless, tannin has some advantages in tannin leather industry and the health of digestion system, such as to cure diarrhea. The proposed methode was applied succesfully to the determination of tannin by composing the complex compound of stabile red solution of iron(ll)-orto phenantrolin. Tannin can reduce iron(LII) to iron(II) after heating up to S(fC for 20 minutes' The iron mil then react with orto-phenantroline, forming a complex of iron(ll)-orto phenantroline which absorb visible light having wavelenght 400- 700 nm. The result of this study shows that the maximum absorbance is found for 505 nm waveknghtt the optimum pH is 5,5; the optimum heating time is 20 minutes. It is also found that the existence ofascorbat acid over 0,5 ppm will interfere the tannin analysis, leading to a necessity to isolate it prior to the analysis.
