Abstract

Currently, tuna bone waste can be used as raw material for processed foods, namely tuna bone sticks. Waste which is a residue or the result of activities that are considered inappropriate and has no economic value so that it tends to be disposed of is the cause of the problem of using this waste as raw material for processed food. Stick is a mixture of flour and eggs added with other raw materials and then processed into snacks. We can find out the halal provisions of sticks and fish, especially tuna, through existing Islamic legal arguments, such as those found in the Al-Quran, As-Sunnah, Ijma' and Qiyas as well as other agreed legal arguments. But how are the provisions of Islamic law related to the use of waste or the rest of the results of fishery activities in the form of fish bones which are then processed into food as has been done by one of the Al-Ijtihad Small and Medium Enterprises (UKM) in Kupang City. The type and approach used in this research is field research with a normative approach to analysis of Islamic law which is descriptive analytical. The data collection technique used observation and interview techniques and then analyzed using qualitative methods. This study shows that the legal provisions of fish bone waste which are then processed into food in the form of sticks are halal. This can be proven by an assessment based on the arguments of Islamic law (ushul fiqh') which consists of the Qur'an, As-Sunnah, Ijma' and Qiyas, then taking the law using themethod mashlahah mursalah. In the results of this study, no legal arguments were found that specifically explained the halal or haram use of fish bone waste into processed food. So it is based on the rule that the original law of everything is lawful and permissible. In addition, it is strengthened by the utilization of tuna fish bone waste, in accordance with the provisions of the applicable halal food requirements. Utilization of tuna bone waste carried out by Al-Ijtihad UKM Kupang City which started from the raw material supply process, production process, packaging process, to the marketing process was carried out in a halal and thayyib way. In the process of utilizing the tuna bone waste, there were no materials or methods that could make the product unlawful.
