Abstract

This research aims to examine the physical and chemical characteristics of the Starry Triggerfish Oil (Abalistes stellaris) and examine the composition of omega-3 and omega-6 fatty acids contained in the Starry Triggerfish Oil (Abalistes stellaris) using Gas Chromatography Mass Spectrometry ( GC-MS). Tests for the quality of the oil carried out included testing the turbidity point, saponification rate, peroxide value, acid value, and water content . The results of this study indicate that chicken fish oil contains several fatty acids with the highest content, namely lauric acid with a content of 19.19% and hexadenoic acid of 6.16% in the fish head, while in the body of the fish there is 20.66% lauric acid, determining the % content of fatty acids. Fat was found in the wide area of the chromatogram. The results of the analysis of Starry Triggerfish Oil showed the physical and chemical characteristics, namely the cloudy point of fish oil on the head and body parts of 63°C and 65°C respectively, the saponification rate of fish oil on the head and body of the fish was 196 mgKOH/g and 210 mgKOH/g, the peroxide value of fish oil in the head and body of the fish is 20 meq/kg and 22 meq/kg respectively, the acid value in the head and body of the fish is the same, namely 1.40 mg/gram/NaOH, the water content fish oil on the head and body, namely 0.8% (v/v) and 0.9% (v/v). The results of determining the characteristics of fish oil are in accordance with fish oil standards set by IFOMA, IFOS (2014) and SNI No.7431: 2015.
