Abstract

Research on the development of carrageenan-based edible film from seaweed (Euchuema cottoni) with various combinations of glycerol and sorbitol plasticizers aims to analyze the effect of variations in plasticizer combinations on the physical and mechanical properties of edible films and their application in extending the shelf life of unfortunate apples. The research was conducted through 3 stages, namely the manufacture of edible film, characterization of carrageenan and edible film, and application of edible film as a poor apple packaging with shelf life testing based on fruit weight loss. The plasticizer concentration used in the preparation of edible film is 30% (w/b) of the weight of carrageenan with a variety of glycerol-sorbitol concentration combinations (0:100, 25:75, 50:50, 75:25, 100:0). Analysis of functional groups of carrageenan and edible film was performed with Fourier Transform Infrared (FTIR). Physical testing included solubility and water vapor permeability (WVTR), while mechanical testing included thickness, tensile strength, elongation, and young modulus. The results showed that the edible film made tended to produce physical and mechanical properties in accordance with JIS (Japanese Industrial Standard) on the parameters of WVTR, thickness, tensile strength, and elongation. The best edible film was obtained from the plasticizer combination variation of glycerol-sorbitol at a ratio of 25:75 with a thickness of 0,081 mm, tensile strength of 8,6188 MPa, elongation of 16,6234%, modulus young of 0,5475 MPa, solubility of 77,95%, and water vapor transmission rate (WVTR) of 5,6296 g.m-2.jam-1. Variations in the glycerol-sorbitol plasticizer combinations had a significant effect (p < 0.05) on mechanical properties such as thickness, elongation, and Young's modulus. However, they did not significantly affect (p > 0.05) the solubility, WVTR, and tensile strength. The application of the edible film as packaging for Manalagi apples had a significant impact on the percentage of weight loss during storage on days 4, 8, and 10. However it did not have a significant effect on day 2.
