Abstract
Gelatin production is generally sourced from cows and pigs; however, ethical, religious, environmental, and health issues encourage exploration of gelatin sources from other materials. This research was conducted to isolate gelatin from Peking duck bones (Anas platyrhynchos domestica) by varying the citric acid concentration in the pre-treatment process. This research aims to determine the functional group of the product isolated from Peking duck bones and determine the effect of citric acid concentration variations on the isolated gelatin's physicochemical properties. The pre-treatment process was carried out by soaking citric acid variations of 11, 13, and 15% for 72 hours. Gelatin was extracted with distilled water solvent using a water bath at graded temperatures of 50, 65, and 80˚C for 4 hours. The gelatine extract was oven-dried for 72 hours. Characterization of gelatin included functional groups, yield calculation, pH, water content, ash content, and protein content. The results of functional group analysis using an FTIR spectrophotometer showed the presence of typical absorption properties of gelatin, namely Amide A, Amide I, Amide II, and Amide III. Variations in citric acid concentration significantly affect yield, pH, water content, ash content, and protein content. A concentration of 15% is the optimum concentration, which produces gelatin with a yield of 11.89%, pH 4.085, water content of 4.60%, ash content of 10.48%, and protein content of 58.31%. The ash content value in this research was >3.25%, so it did not meet SNI standards, while the pH and water content values met GMIA and SNI standards.
