Abstract

Research on making edible film from green bean starch with the addition of glycerol plasticizer as broccoli packaging aims to identify the effect of adding variations in glycerol on the chemical structure and characteristics of edible film as well as broccoli weight loss. This research consists of seven work procedures, namely making starch from green beans, testing the starch content of green beans, making edible film, FTIR functional group analysis, testing the characteristics of the resulting edible film, applying edible film to broccoli for weight loss testing and statistical testing of the resulting data. testing the characteristics of edible film and weight loss of broccoli. The yield of green bean extraction obtained was 10.38568% with a pure starch content of 83.68%. Edible film was made by adding varying concentrations of glycerol of 25.2%, 31.5% and 37.8% of the total weight of starch used. Analysis of functional groups of starch and edible film using the Fourier Transform Infrared (FTIR) instrument. Edible film characteristic tests include thickness, tensile strength, elongation, Young's modulus, water vapor transmission rate (WVTR) and ash content tests. The ash content test is carried out to prove that edible film is safe for consumption. The results show that the film characteristics in the form of thickness, tensile strength and ash content meet edible film standards, while the elongation parameters, Young's modulus, water vapor transmission rate (WVTR) do not meet the applicable standards. The broccoli weight loss test was carried out during nine days of observation. Weight loss measurements were carried out on the first, third, sixth and ninth days of storage. Data processing of the results of testing the characteristics of edible film of green beans and broccoli shrinkage using the parametric Pearson correlation test, the non-parametric Spearman correlation test and the Kruskal-Wallis test using the SPSS version 29 application. young edible film and ash content of edible film. The addition of variations in glycerol only has a real influence on the WVTR edible film parameters. The addition of variations in glycerol concentration tended to have a real influence on the percentage of broccoli weight loss, namely on the first, third and ninth days of observation.
