Abstract

Shrimp shells contain collagen that has the potential to be made into gelatin. This research aims to isolate and characterize gelatin from vannamei shrimp waste (Litopenaeus vannamei) using a variations of hydrochloric acid (HCl) solvent concentrations of 4%, 5%, and 6%. This research was conducted to explore the potential of shrimp shell waste as an alternative raw material that is halal and in accordance with gelatin quality standards. The research process includes sample preparation, collagen hydrolysis using HCl solvent, gelatin extraction, and proximate and functional group analysis using Fourier Transform Infrared. (FTIR). The research results show that HCl concentration affects the yield, moisture content, ash content, and pH of the gelatin produced. The highest yield was obtained at 6% HCl concentration with a value of 2.97%, the lowest moisture content obtained was 9.71%, and the pH value obtained in this study ranged from 3.88 to 5.15, which meets SNI and GMIA standards. FTIR analysis showed a typical spectrum of gelatin, including amide groups A, B, I, II, and III. The ash content of gelatin exceeds the maximum standard of SNI, so process development is needed to improve its quality. This research provides a solution for utilization of vannamei shrimp waste while offering an alternative raw material for gelatin that is halal and beneficial for the food and pharmaceutical industries.
