Abstract

Tofu production business is one of the most promising businesses in the food sector. Nevertheless tofu is not food that can be stored in a long period. Tofu is easily broken and musty. Therefore, in the production of tofu takes good management. In this final project discussed the application of fuzzy logic to solve the problem of production management by making applicationwith the mamdani method. By using this application the tofu industry can make predictions faster than the manual calculation, which is expected to provide convenience for the tofu industry to predict the amount of tofu production based on existing data. By considering variables as reference such as the amount of soybeans, damping cycle, the amount of water and vinegar. Data obtained from UD. Pojok Shop Tahu Mejing in one day able to produce 40- 60 tub know. 1 tub tofu contains 100. For the main raw material of tofu production, UD. Pojok Shop Tahu Mejing was able to spend 80-120 kg of soybeans per day. The method used in the calculation process is using Mamdani method of determining the input variables and output variables that are set firmly. Then change the input variable into fuzzy sets with fuzzification process. The next step is to calculate the defuzzyfication process using the centroid method. While the results of output is the prediction of tofu production. After the test, it resulted in accuracy of the calculation of the application with real data calculation 96.7%, calculationsapplication with mathlab calculation 98.03% and mathlab calculation with real data calculation 98.5%. Overall the application built is able to provide an overview to the tofu business owners to increase tofu production.
